Instructions

  1. Place Chicken in Slow Cooker: Lay the boneless, skinless chicken breasts at the bottom of the slow cooker. Pour 1 cup of chicken broth over the chicken to keep it moist during cooking.
  2. Prepare Parmesan Garlic Mixture: In a small bowl, mix together 1/2 cup grated Parmesan cheese, 4 cloves minced garlic, 1 teaspoon dried basil, 1 teaspoon dried parsley, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Sprinkle this flavorful mixture evenly over the chicken in the slow cooker.
  3. Cook the Chicken Low and Slow: Cover the slow cooker and cook on low heat for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked, tender, and shreds easily with a fork.
  4. Preheat Oven for Toasting Rolls: When the chicken is nearly done, preheat your oven to 375°F (190°C) to prepare the sandwich rolls for toasting.
