  • 1 brown onion, finely chopped
  • 500g Coles 3 star beef mince
  • 2 tbsp instant beef gravy powder
  • 1 cup tomato puree
  • 1 cup cold water

  • 400g red royale potatoes, peeled, diced
  • 300g carrots, peeled, diced
  • 200g button mushrooms, quartered
  • 150g (1 cup) frozen peas and corn

Instructions

  1. Brown the mince and onion: Heat the olive oil in a saucepan over medium-high heat. Add the finely chopped brown onion and the beef mince. Cook, stirring continuously with a wooden spoon to break up the mince, for 6 to 8 minutes or until the mince is thoroughly browned and the onions are softened.
  2. Add gravy and tomato base: Stir in the instant beef gravy powder, tomato puree, and cold water. Mix everything together well to ensure the gravy powder dissolves and the flavors combine evenly.
  3. Simmer with potatoes and carrots: Add the peeled and diced red royale potatoes and carrots to the saucepan. Season with salt and freshly ground black pepper. Cover the saucepan and bring the mixture to a boil, then reduce the heat to medium-low. Let it simmer, stirring occasionally, for about 20 minutes or until the potatoes are just tender.
  4. Incorporate mushrooms and frozen peas and corn: Add the quartered button mushrooms and frozen peas and corn to the saucepan. Cook the mixture for an additional 5 minutes, or until everything is heated through and the mushrooms have softened.
  5. Serve: Spoon the savoury mince mixture over steamed white rice and enjoy a comforting, hearty meal.
