Main Ingredients
- 1 tbsp olive oil
- 1 brown onion, finely chopped
- 500g Coles 3 star beef mince
- 2 tbsp instant beef gravy powder
- 1 cup tomato puree
- 1 cup cold water
Vegetables
- 400g red royale potatoes, peeled, diced
- 300g carrots, peeled, diced
- 200g button mushrooms, quartered
- 150g (1 cup) frozen peas and corn
To Serve
- Steamed white rice
Instructions
- Brown the mince and onion: Heat the olive oil in a saucepan over medium-high heat. Add the finely chopped brown onion and the beef mince. Cook, stirring continuously with a wooden spoon to break up the mince, for 6 to 8 minutes or until the mince is thoroughly browned and the onions are softened.
- Add gravy and tomato base: Stir in the instant beef gravy powder, tomato puree, and cold water. Mix everything together well to ensure the gravy powder dissolves and the flavors combine evenly.
- Simmer with potatoes and carrots: Add the peeled and diced red royale potatoes and carrots to the saucepan. Season with salt and freshly ground black pepper. Cover the saucepan and bring the mixture to a boil, then reduce the heat to medium-low. Let it simmer, stirring occasionally, for about 20 minutes or until the potatoes are just tender.
- Incorporate mushrooms and frozen peas and corn: Add the quartered button mushrooms and frozen peas and corn to the saucepan. Cook the mixture for an additional 5 minutes, or until everything is heated through and the mushrooms have softened.
- Serve: Spoon the savoury mince mixture over steamed white rice and enjoy a comforting, hearty meal.
Notes
- For a thicker gravy, simmer uncovered for the last 5 minutes to reduce the liquid.
- You can substitute the beef mince with lamb or turkey mince if preferred.
- Adding a splash of Worcestershire sauce can enhance the flavor of the gravy.
- Ensure the vegetables are diced evenly for consistent cooking.
- This dish reheats well and can be stored in the fridge for up to 3 days.
