Description

Shrimp Cocktail with Avocado Cilantro Mousse is a refreshing and elegant twist on the classic shrimp appetizer, featuring tender, smoky shrimp served over a silky herb-infused avocado mousse. Perfect for summer parties, festive gatherings, or sophisticated starters that impress!

Ingredients

  • 1 lb large shrimp, peeled and deveined

  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

  • Salt and pepper to taste

  • 2 ripe avocados

  • 1/2 cup sour cream

  • 1/4 cup fresh cilantro leaves

  • 2 tablespoons lime juice

  • 1 clove garlic, minced

  • 1/2 teaspoon ground cumin

  • Fresh parsley for garnish

Instructions

  • Preheat a skillet over medium heat and toss shrimp with olive oil, smoked paprika, salt, and pepper.

  • Sauté the shrimp for about 2–3 minutes per side until pink and cooked through. Set aside to cool slightly.

  • In a food processor, blend avocados, sour cream, cilantro, lime juice, garlic, cumin, salt, and pepper until smooth and creamy.

  • Spoon the avocado mousse into small serving glasses or cups.

  • Top each with a generous portion of shrimp.

  • Garnish with chopped fresh parsley before serving.

Notes

  • For added texture, sprinkle some crispy tortilla strips or crushed pistachios on top.

  • If making ahead, keep avocado mousse covered tightly to prevent browning.

  • Substitute sour cream with Greek yogurt for a lighter version.

  • Serve chilled for the most refreshing flavor.
