  • 1 lb large shrimp, peeled and deveined
  • 12 ripe avocados, sliced
  • 1 large ripe mango, diced
  • 2 cups cooked rice or quinoa
  • Lime juice and zest
  • Fresh cilantro
  • Chili powder

Instructions

  1. Prepare Mango Salsa. Prepare the mango salsa by mixing diced mango, red onion, jalapeño (if desired), lime juice, cilantro, and salt in a bowl. Set aside to chill.
  2. Make Lime-Chili Sauce. In another bowl, whisk together Greek yogurt, lime zest and juice, honey, salt, and pepper to create the lime-chili sauce.
  3. Cook Shrimp. Season the shrimp with chili powder, salt, and pepper. Cook in a hot grill pan for 2-3 minutes per side until pink and charred.
  4. Assemble Bowls. Assemble your bowls by placing cooked rice or quinoa at the base, topping with grilled shrimp, sliced avocado, and mango salsa.
