Description

A vibrant and savory Italian-inspired seafood linguine loaded with shrimp, mussels, cherry tomatoes, and fresh herbs, all tossed in a light garlic and white wine sauce for a coastal comfort classic.


Ingredients

  • 12 oz linguine
  • 1 lb large shrimp, peeled and deveined
  • 1 lb fresh mussels, cleaned
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup dry white wine
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste
  • Freshly grated Parmesan, for garnish
  • Lemon wedges, for serving

Instructions

  1. Cook linguine in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes and sauté until fragrant (about 1 minute).
  3. Add shrimp and cook for 2-3 minutes, just until pink. Remove shrimp and set aside.
  4. Add mussels and white wine to the skillet. Cover and cook for 5-6 minutes, or until mussels open. Discard any that do not open.
  5. Stir in cherry tomatoes and cook for another 2 minutes until they begin to soften.
  6. Return shrimp to the skillet, then add the cooked linguine and toss everything together.
  7. Season with salt and pepper. Sprinkle with fresh parsley and grated Parmesan.
  8. Serve hot with lemon wedges on the side.

Notes

  • Ensure mussels are scrubbed and beards removed before cooking.
  • Use a good quality dry white wine for better flavor.
  • Parmesan can be omitted for a more authentic seafood pasta experience.
