- 12 oz linguine
- 1 lb large shrimp, peeled and deveined
- 1 lb fresh mussels, cleaned
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup cherry tomatoes, halved
- 1/2 cup dry white wine
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
- Freshly grated Parmesan, for garnish
- Lemon wedges, for serving
Instructions
- Cook linguine in a large pot of salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes and sauté until fragrant (about 1 minute).
- Add shrimp and cook for 2-3 minutes, just until pink. Remove shrimp and set aside.
- Add mussels and white wine to the skillet. Cover and cook for 5-6 minutes, or until mussels open. Discard any that do not open.
- Stir in cherry tomatoes and cook for another 2 minutes until they begin to soften.
- Return shrimp to the skillet, then add the cooked linguine and toss everything together.
- Season with salt and pepper. Sprinkle with fresh parsley and grated Parmesan.
- Serve hot with lemon wedges on the side.
Notes
- Ensure mussels are scrubbed and beards removed before cooking.
- Use a good quality dry white wine for better flavor.
- Parmesan can be omitted for a more authentic seafood pasta experience.
