Ingredients
Scale
Corn Mixture
- 30 ounces canned cream-style corn
- 15 ounces canned whole kernel corn, drained
- ¾ cup crushed saltine crackers
- 8 ounces shredded cheddar cheese
- ¼ cup melted butter
- 3 large eggs
- ½ teaspoon salt
- ½ teaspoon onion powder
- ¼ teaspoon ground black pepper
Topping
- ¾ cup crushed saltine crackers
- ¼ cup melted butter
- ½ teaspoon paprika
Instructions
- Preheat and prepare dish: Preheat your oven to 350°F (175°C). Grease an 11×7 inch casserole dish thoroughly to prevent sticking.
- Drain corn: Drain the canned whole kernel corn to remove excess liquid.
- Mix corn ingredients: In a large bowl, combine the cream-style corn, drained whole kernel corn, ¾ cup crushed saltine crackers, shredded cheddar cheese, ¼ cup melted butter, eggs, salt, onion powder, and black pepper. Stir well until all ingredients are thoroughly mixed.
- Prepare topping: In a small bowl, mix the remaining ¾ cup crushed saltine crackers with ¼ cup melted butter and paprika. Toss together until the cracker crumbs are evenly coated with butter and paprika.
- Assemble casserole: Pour the corn mixture into the prepared casserole dish, spreading it evenly. Sprinkle the buttery cracker topping evenly over the corn mixture.
- Bake: Place the casserole in the preheated oven and bake for 35 to 45 minutes. The casserole should be set with a slight jiggle in the center, and the topping should be golden brown.
- Cool and serve: Remove from the oven and let the casserole cool for 15 minutes before serving to allow it to set further and make serving easier.
Notes
- Use crushed saltine crackers for a crunchy topping that contrasts the creamy corn.
- Letting the casserole cool makes it easier to cut and serve.
- The slight jiggle in the center indicates the casserole is perfectly set — avoid overbaking to keep it moist.
- For extra flavor, consider adding a pinch of cayenne pepper or smoked paprika to the corn mixture.
- This recipe serves 10 and can be doubled for larger gatherings.
