Description

Golden puff pastry squares topped with creamy cheese, crisp radish slices, and fresh microgreens—these tartlets are elegant, airy, and full of garden-fresh flavor.


Ingredients

  • 1 sheet puff pastry, thawed
  • 4 oz cream cheese or goat cheese
  • 1 tbsp sour cream or Greek yogurt
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 45 radishes, thinly sliced
  • 1/2 small red onion, thinly sliced (optional)
  • 1 cup microgreens (any variety)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unfold the puff pastry sheet and cut into 6 even squares.
  3. Score a smaller square inside each puff square (without cutting through) to create a border, then prick the centers with a fork.
  4. Brush edges with egg wash and bake for 12–15 minutes, or until puffed and golden.
  5. While pastry cools slightly, mix cream cheese, sour cream, lemon juice, salt, and pepper in a small bowl until smooth.
  6. Gently press down the center of each tartlet and spread a spoonful of the cheese mixture inside the borders.
  7. Top with radish slices, red onion if using, and a generous pile of microgreens.
  8. Serve immediately, optionally drizzled with olive oil or an herbed vinaigrette.

  • Use goat cheese for a tangier flavor or cream cheese for a milder one.
  • Best served fresh while the pastry is crisp.
