- 1 sheet puff pastry, thawed
- 4 oz cream cheese or goat cheese
- 1 tbsp sour cream or Greek yogurt
- 1 tsp lemon juice
- Salt and pepper to taste
- 4–5 radishes, thinly sliced
- 1/2 small red onion, thinly sliced (optional)
- 1 cup microgreens (any variety)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Unfold the puff pastry sheet and cut into 6 even squares.
- Score a smaller square inside each puff square (without cutting through) to create a border, then prick the centers with a fork.
- Brush edges with egg wash and bake for 12–15 minutes, or until puffed and golden.
- While pastry cools slightly, mix cream cheese, sour cream, lemon juice, salt, and pepper in a small bowl until smooth.
- Gently press down the center of each tartlet and spread a spoonful of the cheese mixture inside the borders.
- Top with radish slices, red onion if using, and a generous pile of microgreens.
- Serve immediately, optionally drizzled with olive oil or an herbed vinaigrette.

- Use goat cheese for a tangier flavor or cream cheese for a milder one.
- Best served fresh while the pastry is crisp.
