Description

A nutty twist on the classic banana bread—this loaf is rich, moist, and packed with natural banana sweetness, creamy peanut butter, and a golden crunchy peanut topping. Perfect for breakfast, snacking, or cozy coffee breaks.


Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup creamy peanut butter
  • 1/3 cup maple syrup or honey
  • 1/4 cup coconut oil or melted butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/3 cup roasted peanuts, chopped (plus extra for topping)
  • 2 tbsp rolled oats (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, combine mashed bananas, peanut butter, maple syrup, coconut oil, eggs, and vanilla extract. Mix until smooth.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually fold the dry ingredients into the wet mixture. Stir until just combined.
  5. Fold in chopped peanuts.
  6. Pour batter into prepared loaf pan and smooth the top. Sprinkle with extra peanuts and rolled oats.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Use natural peanut butter for a less sweet, more peanut-forward flavor.
  • Wrap leftovers tightly to keep moist for up to 3 days, or freeze for longer storage.
  • Great served warm with a smear of butter or more peanut butter.
