- 3 ripe bananas, mashed
- 1/2 cup creamy peanut butter
- 1/3 cup maple syrup or honey
- 1/4 cup coconut oil or melted butter
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/3 cup roasted peanuts, chopped (plus extra for topping)
- 2 tbsp rolled oats (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, combine mashed bananas, peanut butter, maple syrup, coconut oil, eggs, and vanilla extract. Mix until smooth.
- In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture. Stir until just combined.
- Fold in chopped peanuts.
- Pour batter into prepared loaf pan and smooth the top. Sprinkle with extra peanuts and rolled oats.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Use natural peanut butter for a less sweet, more peanut-forward flavor.
- Wrap leftovers tightly to keep moist for up to 3 days, or freeze for longer storage.
- Great served warm with a smear of butter or more peanut butter.
