Description

A golden, fluffy loaf packed with tender cubes of butternut squash, savory ham, melted cheese, and crunchy walnuts. This hearty bake is perfect for brunch, picnics, or a rustic lunch with a crisp green salad.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs
  • 1/2 cup milk
  • 1/3 cup olive oil
  • 1 cup cooked butternut squash, mashed or diced
  • 3/4 cup diced cooked ham
  • 3/4 cup shredded Gruyère or cheddar cheese
  • 1/3 cup chopped walnuts
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a standard loaf pan with parchment paper.
  2. In a large bowl, mix flour, baking powder, salt, and nutmeg.
  3. In another bowl, whisk together eggs, milk, and olive oil. Stir in mashed or diced butternut squash.
  4. Fold wet ingredients into dry until just combined. Gently mix in ham, cheese, and walnuts.
  5. Pour batter into the prepared loaf pan and smooth the top.
  6. Bake for 45–50 minutes, or until golden and a toothpick comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.

Notes

  • For a vegetarian version, omit the ham or substitute with roasted vegetables.
  • Butternut squash can be mashed for a smoother texture or diced for chunkiness.
  • Store leftovers in an airtight container for up to 3 days.
