- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 3 large eggs
- 1/2 cup milk
- 1/3 cup olive oil
- 1 cup cooked butternut squash, mashed or diced
- 3/4 cup diced cooked ham
- 3/4 cup shredded Gruyère or cheddar cheese
- 1/3 cup chopped walnuts
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a standard loaf pan with parchment paper.
- In a large bowl, mix flour, baking powder, salt, and nutmeg.
- In another bowl, whisk together eggs, milk, and olive oil. Stir in mashed or diced butternut squash.
- Fold wet ingredients into dry until just combined. Gently mix in ham, cheese, and walnuts.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 45–50 minutes, or until golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.
Notes
- For a vegetarian version, omit the ham or substitute with roasted vegetables.
- Butternut squash can be mashed for a smoother texture or diced for chunkiness.
