Ingredients
-
6 large eggs
-
1 ripe avocado
-
3 slices bacon, cooked and crumbled
-
2 tablespoons mayonnaise
-
1 teaspoon Dijon mustard
-
1 tablespoon lime juice
-
1 tablespoon finely chopped red onion
-
1 tablespoon chopped fresh cilantro
-
Salt and pepper to taste
-
Paprika for garnish (optional)
Instructions
-
Place the eggs in a saucepan and cover with water. Bring to a boil, then remove from heat, cover, and let sit for 10-12 minutes.
-
Drain and transfer eggs to an ice bath to cool. Peel the eggs and slice them in half lengthwise.
-
Remove the yolks and place them in a medium bowl. Mash yolks with avocado, mayonnaise, Dijon mustard, and lime juice until smooth.
-
Stir in the crumbled bacon (reserving a little for topping), red onion, and cilantro. Season with salt and pepper to taste.
-
Spoon or pipe the mixture back into the egg white halves.
-
Sprinkle with reserved bacon bits and a light dusting of paprika if desired.
-
Serve immediately or refrigerate until ready to serve.
Notes
-
Use perfectly ripe avocado for the creamiest texture.
-
For extra smokiness, try using smoked paprika as a garnish.
-
Best served fresh, but can be refrigerated for up to 4 hours before serving.
