Ingredients

  • 6 large eggs

  • 1 ripe avocado

  • 3 slices bacon, cooked and crumbled

  • 2 tablespoons mayonnaise

  • 1 teaspoon Dijon mustard

  • 1 tablespoon lime juice

  • 1 tablespoon finely chopped red onion

  • 1 tablespoon chopped fresh cilantro

Instructions

  • Place the eggs in a saucepan and cover with water. Bring to a boil, then remove from heat, cover, and let sit for 10-12 minutes.

  • Drain and transfer eggs to an ice bath to cool. Peel the eggs and slice them in half lengthwise.

  • Remove the yolks and place them in a medium bowl. Mash yolks with avocado, mayonnaise, Dijon mustard, and lime juice until smooth.

  • Stir in the crumbled bacon (reserving a little for topping), red onion, and cilantro. Season with salt and pepper to taste.

  • Spoon or pipe the mixture back into the egg white halves.
