- 10 pork or beef sausages
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can (14 oz) crushed tomatoes
- 1/2 cup beef broth
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large skillet or sauté pan, heat olive oil over medium heat. Add sausages and brown on all sides, about 5–6 minutes. Remove and set aside.
- In the same pan, add onion and cook until soft and translucent. Add garlic and cook for another minute.
- Stir in tomato paste and cook for 1 minute to deepen the flavor.
- Pour in crushed tomatoes and beef broth. Stir in paprika, thyme, salt, and pepper.
- Return sausages to the pan and simmer on low heat for 20–25 minutes, stirring occasionally, until sausages are cooked through and sauce thickens.
- Garnish with chopped parsley and serve hot with mashed potatoes, rice, or bread.
