- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup dark chocolate chunks
- 1/3 cup roasted peanuts, chopped
- Flaky sea salt, for topping
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet mixture and mix until combined.
- Fold in chocolate chunks and roasted peanuts.
- Scoop dough into balls and place on the prepared baking sheet, spacing evenly.
- Lightly press each ball and sprinkle with flaky sea salt.
- Bake for 10–12 minutes, or until edges are golden and centers are just set.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Do not overbake; cookies will continue to set as they cool.
- For extra flavor, toast the peanuts before chopping.
- Use a cookie scoop for even portions.
