- 6 tablespoons raw, unsalted cashews, soaked in hot water for 1 hour and drained
- 1 cup plain soymilk or any milk you prefer
- 4 bags of earl grey tea
- 1/2 cup thick coconut cream from a can
- 3/4 teaspoon vanilla essence
- 1/8 teaspoon salt
- 2 tablespoons maple syrup
- 1/4 cup chia seeds for thicker texture, or 3 tablespoons for softer texture

- Step 1: Soak the Cashews Begin by soaking the cashews to ensure they are soft and blend smoothly. Cover them with boiling water in a bowl and set them aside for 1 hour. This will allow the cashews to soften and be ready for blending later.
- Step 2: Prepare the Tea-Infused Milk Heat some soymilk in a small saucepan over medium to medium-high heat until it reaches just below boiling point, around 200 degrees if you have a thermometer. Once heated, remove the saucepan from the heat and add tea bags. Let the tea steep in the milk for 4 to 5 minutes. Before removing the tea bags, press them gently with a spoon against the side of the pan to extract maximum flavor. Set the tea-infused milk aside to cool for about 15 minutes.
- Step 3: Blend the Ingredients In a small blender, such as a NutriBullet, combine the coconut cream, the drained cashews, the cooled tea-infused milk, vanilla extract, salt, and maple syrup. Alternatively, you can use a straight-sided liquid measuring cup or a tall bowl with an immersion blender. Blend the mixture until it is very smooth. For the best results, blend for 20-30 seconds, allow it to sit for a minute or two, and then blend again.
- Step 4: Incorporate Chia Seeds After blending, stir in the chia seeds without blending them. Let the mixture sit for a few minutes to allow the chia seeds to begin expanding. Stir gently as needed to ensure the seeds are evenly distributed and do not all settle at the bottom.
- Step 5: Portion and Chill Divide the mixture among 3 individual containers or pour it into one larger container. Refrigerate for 1-2 hours until it becomes firm, or leave it overnight for the best texture. This resting time will allow the chia seeds to fully expand and thicken the mixture.
- Step 6: Serve and Enjoy Once set, serve the chilled treat with your favorite toppings, such as fruits, nuts, or a drizzle of additional maple syrup. Enjoy this creamy and delicious pudding-like dessert!
