Instructions
- Preheat oven: Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Mix butter and sugar: In a large bowl, beat butter and sugar together until light and fluffy.
- Add egg and vanilla: Mix in the egg and vanilla.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, and salt.
- Make dough: Gradually add the dry ingredients to the wet ingredients, mixing until dough forms.
- Shape and sugar coat: Scoop dough into 1-inch balls, then roll each in pastel sanding sugar.
- Arrange on baking sheet: Place balls on baking sheet, a couple inches apart.
- Bake cookies: Bake for 8-10 minutes, until the edges are just set (don’t overbake—soft cookies are the goal).
- Add chocolate kisses: Remove from oven and immediately press a chocolate kiss into the center of each cookie.
- Cooling: Let cool on the baking sheet for a few minutes before transferring to a wire rack.
