Description

These Quick & Easy Easter Blossom Cookies are soft, buttery treats adorned with pastel sanding sugar and topped with chocolate kisses, perfect for celebrating spring and Easter gatherings.

  • 1 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour

  • pastel sanding sugar (pink, purple, yellow, or whatever screams “spring” to you)
  • chocolate kisses, unwrapped

Instructions

  1. Preheat oven: Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. Mix butter and sugar: In a large bowl, beat butter and sugar together until light and fluffy.
  3. Add egg and vanilla: Mix in the egg and vanilla.
  4. Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, and salt.
  5. Make dough: Gradually add the dry ingredients to the wet ingredients, mixing until dough forms.
  6. Shape and sugar coat: Scoop dough into 1-inch balls, then roll each in pastel sanding sugar.
  7. Arrange on baking sheet: Place balls on baking sheet, a couple inches apart.
  8. Bake cookies: Bake for 8-10 minutes, until the edges are just set (don’t overbake—soft cookies are the goal).
  9. Add chocolate kisses: Remove from oven and immediately press a chocolate kiss into the center of each cookie.
  10. Cooling: Let cool on the baking sheet for a few minutes before transferring to a wire rack.
