Ingredients
Scale
Dry Ingredients
- 2 cups all-purpose flour
- 2 tsp pumpkin pie spice
- 2 tsp baking powder
- 1/2 tsp salt
Wet Ingredients
- 1 1/2 cups pumpkin puree
- 1/3 cup olive oil
- 1/4 cup butter, melted
- 1 tsp vanilla extract
- 2 eggs, at room temperature
Sugars
- 2/3 cup brown sugar
- 1/2 cup granulated sugar (in batter)
- 3/4 cup granulated sugar (for coating)
Coating
- 2 tsp cinnamon
- 1/4 cup butter, melted (for brushing)
Instructions
- Preheat and Prepare: Preheat the oven to 350°F (175°C). Lightly grease a large donut pan with cooking spray to ensure the donuts don’t stick.
- Mix Wet Ingredients: In a medium bowl, whisk together the pumpkin puree, olive oil, melted butter, vanilla extract, eggs, brown sugar, and granulated sugar until the mixture is smooth and well combined.
- Add Dry Ingredients: Gradually stir in the all-purpose flour, pumpkin pie spice, baking powder, and salt. Stir gently until just combined, being careful not to overmix the batter to keep the donuts tender.
- Fill Donut Pan: Transfer the batter to a piping bag or a plastic bag placed over a cup. Snip off one corner of the bag, and pipe the batter evenly into the prepared donut pan cavities. This recipe yields about 8 large donuts.
- Bake: Place the pan in the oven and bake for 25 minutes or until a toothpick inserted into the donuts comes out clean. Remove from the oven and let the donuts cool for 10 minutes in the pan before transferring to a cooling rack.
- Prepare Coating: In a shallow container, mix together the 3/4 cup granulated sugar and 2 teaspoons cinnamon, creating the cinnamon sugar coating.
- Coat Donuts: Once the donuts are completely cool, brush each one generously with melted butter to ensure the cinnamon sugar sticks to every corner.
- Apply Cinnamon Sugar: One by one, dip the butter-brushed donuts into the cinnamon sugar mixture, coating all sides thoroughly.
- Serve and Enjoy: Your pumpkin spice donuts are now ready to be enjoyed warm or at room temperature with your favorite beverage.
Notes
- For best results, use room temperature eggs.
- Do not overmix the batter to prevent dense donuts.
- Pumpkin puree can be homemade or canned pure pumpkin (not pie filling).
- Make sure donuts are completely cool before coating to ensure the cinnamon sugar adheres well.
- Store donuts in an airtight container for up to 2 days for optimal freshness.
