Strawberry Yogurt Mixture

- 1 cup strawberries (hulled and chopped into 1/4-inch pieces)

Blackberry Yogurt Mixture
- 1.25 cups yogurt
- 1 cup blackberries (I use Driscoll’s brand berries for consistent sweetness)
- 1 tablespoon honey
- 0.5 teaspoon vanilla extract
Instructions
- Prepare the Strawberry Yogurt Mixture
In a blender, combine 1.25 cups yogurt, hulled and chopped strawberries, 1 tablespoon honey, and 0.5 teaspoon vanilla extract. Blend until smooth and well combined, about 30-45 seconds—you want a uniform pink color with no large berry chunks. Pour the mixture into a bowl and set aside. I prefer Fage 5% Greek yogurt because it creates a creamier, more indulgent bite compared to regular yogurt. - Prepare the Blackberry Yogurt Mixture
In the same blender (or a clean one), combine 1.25 cups yogurt, blackberries, 1 tablespoon honey, and 0.5 teaspoon vanilla extract. Blend until smooth, about 30-45 seconds, until the mixture turns a deep purple color. Pour into a separate bowl. Using Driscoll’s brand berries ensures consistent sweetness across batches, which helps both flavors remain balanced. - Fill the Ice Cube Tray
Spoon the strawberry yogurt mixture from Step 1 into half of the ice cube tray compartments, filling each about three-quarters full. Then spoon the blackberry yogurt mixture from Step 2 into the remaining compartments, filling them to the same level. You can alternate colors for a visually appealing pattern, or group them by flavor—whichever you prefer. - Freeze Until Solid
Place the filled ice cube tray in the freezer and let it freeze for at least 4-6 hours, or until completely solid. Once frozen solid, pop the bites out of the tray and store them in a freezer-safe container or bag for up to 3 weeks. They’re ready to enjoy straight from the freezer as a refreshing snack.
