Description

Velvety smooth marzipan blended with finely ground pistachios, hand-rolled into soft truffle-like bites and crowned with crushed nuts. These naturally sweet, no-bake treats are luxurious, vegan-friendly, and perfect for gifting or elegant snacking.


Ingredients

  • 1 1/2 cups almond flour
  • 3/4 cup finely ground pistachios (plus more for topping)
  • 1/2 cup powdered sugar
  • 1/4 tsp sea salt
  • 2 tbsp maple syrup
  • 1 tsp rose water (optional, for a floral touch)
  • 12 tbsp plant-based milk (as needed for consistency)

Instructions

  1. In a food processor, combine almond flour, ground pistachios, powdered sugar, and salt. Pulse until well mixed.
  2. Add maple syrup and rose water, and pulse again until the dough begins to clump.
  3. If the mixture is too dry, add plant-based milk a teaspoon at a time until it forms a smooth dough.
  4. Scoop out small portions and roll into smooth balls using your hands.
  5. Roll or sprinkle each ball with crushed pistachios for a decorative finish.
  6. Chill in the refrigerator for at least 30 minutes to firm up before serving.
  7. Store in an airtight container in the fridge for up to one week.

Notes

  • Use high-quality pistachios for best flavor.
  • Rose water adds a unique floral note, but can be omitted if preferred.
