Description

This Peach and Burrata Caprese Salad is a sweet, creamy, and refreshing twist on the classic Italian favorite. Juicy ripe peaches, luscious burrata cheese, and fragrant basil come together with a drizzle of olive oil and balsamic glaze to create the ultimate summer salad.

Ingredients

Ingredients:

  • 2-3 fresh peaches, sliced into wedges

  • 1-2 balls of burrata cheese, torn into chunks

  • Fresh basil leaves, torn

  • Extra virgin olive oil, for drizzling

  • Balsamic glaze, optional

  • Salt and pepper, to taste

Optional Add-ins & Swaps:

  • Salad greens (arugula, mixed greens) as a base

  • Substitute peaches with nectarines or apricots

  • Use mozzarella or ricotta instead of burrata

  • Swap basil with mint or arugula

  • Use honey or maple syrup in place of balsamic glaze

  • Add cherry tomatoes, cucumber slices, figs, or strawberries

  • For crunch, toss in toasted pine nuts or sliced almonds

Instructions

  1. Prep the Peaches:
Wash and slice the peaches into wedges.

  2. Plate the Salad:
Spread a bed of salad greens on a large platter or plate.

  3. Add the Burrata:
Tear the burrata into chunks and arrange on top of the greens.

  4. Add Peaches & Basil:
Place the peach slices around the burrata and sprinkle torn basil leaves over the top.

  5. Finish with Flavor:
Drizzle with olive oil and, if desired, a touch of balsamic glaze. Season with salt and pepper to taste.

  6. Serve:
Serve immediately as a light lunch, starter, or elegant side dish.

Notes

  • For best results, use ripe, juicy peaches and fresh burrata straight from the fridge.

  • Can be made in individual portions or as a large platter for sharing.
