  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup jelly (grape or strawberry)

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugars: In a mixing bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add egg and vanilla: Add the egg and vanilla extract; mix until combined.
  4. Combine dry ingredients: In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually blend this into the wet mixture until a smooth dough forms.
  5. Form dough discs: Scoop about 2 tablespoons of dough, flatten into discs, and place half on the prepared baking sheet.
