- 1 cup creamy peanut butter
- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup jelly (grape or strawberry)
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugars: In a mixing bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla: Add the egg and vanilla extract; mix until combined.
- Combine dry ingredients: In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually blend this into the wet mixture until a smooth dough forms.
- Form dough discs: Scoop about 2 tablespoons of dough, flatten into discs, and place half on the prepared baking sheet.
- Add jelly and seal: Add approximately 1 teaspoon of jelly in the center of each disc before topping with another disc of dough. Press edges to seal.
- Bake cookies: Bake for 12-15 minutes or until golden around the edges. Let cool on a wire rack.
