Crispy-bottomed pan-fried vegetable buns stuffed with tofu, cabbage, and green beans, served with a savory scallion-sesame dipping sauce—perfect as a snack, appetizer, or light vegan meal.

- 2 cups all-purpose flour
- 2/3 cup warm water
- 1 tsp sugar
- 1/2 tsp salt
- 1 tsp instant yeast
- 1 cup green beans, finely chopped
- 1/2 cup shredded cabbage
- 1/4 cup carrot, grated
- 1/2 block firm tofu, crumbled
- 2 scallions, chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp ground white pepper
- 1 tsp cornstarch
- 2 tbsp vegetable oil
- 1 tbsp white sesame seeds
- 1 tbsp black sesame seeds
- 2 tbsp soy sauce (for dipping sauce)
- 1 tbsp rice vinegar
- 1 tsp sesame oil (for dipping sauce)
- 1 tsp maple syrup or sugar
- 1 scallion, finely chopped (for dipping sauce)
Instructions
- In a bowl, mix flour, yeast, sugar, salt, and warm water. Knead into a smooth dough and let rise for 1 hour until doubled in size.
- While the dough rises, prepare the filling. In a pan over medium heat, sauté cabbage, carrots, and green beans for about 5 minutes until softened.
- Add crumbled tofu, soy sauce, sesame oil, white pepper, and cornstarch. Stir to combine until mixture is slightly dry. Set aside to cool.
- Divide the risen dough into 10 equal pieces. Flatten each piece into a circle and place 1 tablespoon of filling in the center. Pinch the edges together to seal into a bun shape.
- Heat 1 tablespoon vegetable oil in a nonstick skillet over medium heat. Place buns seam-side down and cook for 2–3 minutes until golden on the bottom.
- Add 1/4 cup water to the skillet, cover with a lid, and steam for 5 minutes or until the water evaporates.
- Remove the lid and cook for another minute to crisp the bottoms again. Remove from pan.
- Mix soy sauce, rice vinegar, sesame oil, maple syrup (or sugar), and chopped scallion in a bowl to make the dipping sauce.
- Garnish buns with white and black sesame seeds while still warm and serve with dipping sauce.
Notes
- For best results, use a nonstick skillet with a lid.
- You can prepare the filling a day in advance and refrigerate it.
- These buns can be frozen after steaming and reheated in a pan or microwave.
