Instructions
- Cook the Chicken: Heat olive oil in a large pot over medium-high heat. Add diced chicken breast, season with salt and pepper, and cook until browned and cooked through, about 5–7 minutes. Once done, remove the chicken from the pot and set aside.
- Sauté Garlic: In the same pot, add the minced garlic and cook for about 30 seconds until fragrant, stirring frequently to avoid burning.
- Add Sauce Ingredients: Pour in the BBQ sauce, honey, and chicken broth into the pot with the garlic. Stir well to blend all the flavors together.
- Cook the Pasta: Add the rotini pasta to the pot, stirring to make sure the pasta is fully submerged in the liquid. Bring the mixture to a boil, then reduce heat to a simmer. Cook for 12–15 minutes, stirring occasionally to prevent sticking, until the pasta is tender and most of the liquid is absorbed.
- Combine Chicken and Sauce: Once the pasta is cooked, return the cooked chicken to the pot. Stir thoroughly to coat the chicken evenly with the honey garlic BBQ sauce.
- Garnish and Serve: Sprinkle chopped fresh parsley over the pasta for garnish. Serve hot and enjoy this satisfying one-pot meal.
