These rich and fudgy no-bake energy balls are made with dates, cocoa, almonds, and shredded coconut—perfectly bite-sized and naturally sweetened for a clean, satisfying snack or healthy dessert.

- 1 cup Medjool dates, pitted
- 3/4 cup raw almonds (or any preferred nuts)
- 1/4 cup unsweetened cocoa powder
- 1/4 cup shredded coconut (plus extra for rolling)
- 1 tbsp chia seeds (optional)
- 1 tbsp coconut oil
- 1 tsp vanilla extract
- Pinch of sea salt
Instructions
- Add almonds to a food processor and pulse until finely chopped.
- Add dates, cocoa powder, shredded coconut, chia seeds, coconut oil, vanilla extract, and sea salt.
- Blend until the mixture forms a sticky dough. Scrape down sides as needed.
- Scoop out about 1 tablespoon of the mixture and roll into balls.
- Roll some of the balls in extra shredded coconut for coating.
- Chill in the fridge for 20–30 minutes before serving. Store in an airtight container.
Notes
- If your dates are dry, soak them in warm water for 10 minutes and drain before using.
- Use walnuts, pecans, or cashews in place of almonds for variation.
- Add a tablespoon of nut butter for extra creaminess and flavor.
- These keep well refrigerated for up to 1 week or frozen for up to 3 months.
