Description

These rich and fudgy no-bake energy balls are made with dates, cocoa, almonds, and shredded coconut—perfectly bite-sized and naturally sweetened for a clean, satisfying snack or healthy dessert.


Ingredients

  • 1 cup Medjool dates, pitted
  • 3/4 cup raw almonds (or any preferred nuts)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup shredded coconut (plus extra for rolling)
  • 1 tbsp chia seeds (optional)
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract
  • Pinch of sea salt

Instructions

  1. Add almonds to a food processor and pulse until finely chopped.
  2. Add dates, cocoa powder, shredded coconut, chia seeds, coconut oil, vanilla extract, and sea salt.
  3. Blend until the mixture forms a sticky dough. Scrape down sides as needed.
  4. Scoop out about 1 tablespoon of the mixture and roll into balls.
  5. Roll some of the balls in extra shredded coconut for coating.
  6. Chill in the fridge for 20–30 minutes before serving. Store in an airtight container.

Notes

  • If your dates are dry, soak them in warm water for 10 minutes and drain before using.
  • Use walnuts, pecans, or cashews in place of almonds for variation.
  • Add a tablespoon of nut butter for extra creaminess and flavor.
  • These keep well refrigerated for up to 1 week or frozen for up to 3 months.
