Description

Fluffy silver-dollar pancakes layered with fresh strawberries and creamy Nutella, served on skewers for a fun, bite-sized treat. Perfect for brunch or party platters!


Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup buttermilk
  • 1 large egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 10 fresh strawberries, sliced
  • 1/2 cup Nutella or chocolate spread
  • Toothpicks or wooden skewers

Instructions

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk the buttermilk, egg, melted butter, and vanilla.
  3. Combine wet and dry ingredients until just mixed — do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease.
  5. Drop small spoonfuls of batter to form mini pancakes, about 2 inches wide. Cook for 1-2 minutes on each side or until golden brown.
  6. Let the pancakes cool slightly before assembling.
  7. Layer a mini pancake, a strawberry slice, a small dollop of Nutella, and repeat until you have 3 layers.
  8. Carefully skewer through the center with a toothpick to hold them together.
  9. Serve immediately or refrigerate and enjoy chilled.

Notes

  • Do not overmix the pancake batter to keep them fluffy.
