- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup buttermilk
- 1 large egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 10 fresh strawberries, sliced
- 1/2 cup Nutella or chocolate spread
- Toothpicks or wooden skewers
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk the buttermilk, egg, melted butter, and vanilla.
- Combine wet and dry ingredients until just mixed — do not overmix.
- Heat a non-stick skillet or griddle over medium heat and lightly grease.
- Drop small spoonfuls of batter to form mini pancakes, about 2 inches wide. Cook for 1-2 minutes on each side or until golden brown.
- Let the pancakes cool slightly before assembling.
- Layer a mini pancake, a strawberry slice, a small dollop of Nutella, and repeat until you have 3 layers.
- Carefully skewer through the center with a toothpick to hold them together.
- Serve immediately or refrigerate and enjoy chilled.
