Description

Crispy baguette rounds topped with creamy smashed avocado, crispy bacon bits, juicy cherry tomatoes, and a sprinkle of everything seasoning—perfect for brunch or party platters.


Ingredients

  • 1 baguette, sliced into 1/2-inch thick rounds
  • 2 ripe avocados
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1/2 cup cooked bacon bits
  • 1/2 cup cherry tomatoes, halved (mixed red and yellow)
  • 1 tablespoon everything bagel seasoning
  • 1 tablespoon olive oil (for brushing)

Instructions

  1. Preheat oven to 375°F (190°C). Place baguette slices on a baking sheet and brush with olive oil.
  2. Toast for 7–8 minutes or until golden and crispy. Let cool slightly.
  3. In a bowl, mash the avocados with lemon juice, salt, and pepper until smooth and creamy.
  4. Spread mashed avocado over each toasted baguette round.
  5. Top with bacon bits and half a cherry tomato.
  6. Sprinkle with everything bagel seasoning and serve immediately.

Notes

  • To prevent avocado from browning, add extra lemon juice or assemble just before serving.
  • Make it vegetarian by skipping the bacon or using a plant-based alternative.
