- 1 baguette, sliced into 1/2-inch thick rounds
- 2 ripe avocados
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1/2 cup cooked bacon bits
- 1/2 cup cherry tomatoes, halved (mixed red and yellow)
- 1 tablespoon everything bagel seasoning
- 1 tablespoon olive oil (for brushing)
Instructions
- Preheat oven to 375°F (190°C). Place baguette slices on a baking sheet and brush with olive oil.
- Toast for 7–8 minutes or until golden and crispy. Let cool slightly.
- In a bowl, mash the avocados with lemon juice, salt, and pepper until smooth and creamy.
- Spread mashed avocado over each toasted baguette round.
- Top with bacon bits and half a cherry tomato.
- Sprinkle with everything bagel seasoning and serve immediately.
Notes
- To prevent avocado from browning, add extra lemon juice or assemble just before serving.
