Description

Juicy, marinated grilled chicken skewers packed with garlic, lemon, and warm spices, served with sumac onions, creamy toum (garlic sauce), and a crisp cucumber tomato salad. A vibrant and balanced platter bursting with flavor.


Ingredients

  • 2 lbs boneless skinless chicken breast or thigh, cubed
  • 1/2 cup plain yogurt
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped
  • 1 red onion, thinly sliced
  • 1 tsp sumac
  • 1/2 tsp salt
  • 1 tbsp lemon juice
  • Toum (garlic sauce) or hummus
  • Fresh parsley for garnish

Instructions

  1. In a bowl, combine yogurt, olive oil, garlic, lemon juice, and spices. Add chicken and mix well. Cover and marinate in the fridge for at least 1 hour, preferably overnight.
  2. Prepare salad by tossing tomatoes and cucumber with lemon juice, olive oil, salt, and pepper. Set aside.
  3. For the onions, mix sliced onion with sumac, salt, and lemon juice. Let sit to pickle lightly.
  4. Preheat grill or grill pan over medium-high heat. Thread marinated chicken onto skewers.
  5. Grill skewers for 10–12 minutes, turning occasionally, until cooked through and slightly charred.
  6. Serve hot with salad, sumac onions, toum or hummus, and garnish with parsley.

Notes

  • For extra flavor, marinate the chicken overnight.
  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Can be served with pita or rice for a complete meal.
