- 2 lbs boneless skinless chicken breast or thigh, cubed
- 1/2 cup plain yogurt
- 3 tbsp olive oil
- 3 cloves garlic, minced
- Juice of 1 lemon
- 1 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped
- 1 red onion, thinly sliced
- 1 tsp sumac
- 1/2 tsp salt
- 1 tbsp lemon juice
- Toum (garlic sauce) or hummus
- Fresh parsley for garnish
Instructions
- In a bowl, combine yogurt, olive oil, garlic, lemon juice, and spices. Add chicken and mix well. Cover and marinate in the fridge for at least 1 hour, preferably overnight.
- Prepare salad by tossing tomatoes and cucumber with lemon juice, olive oil, salt, and pepper. Set aside.
- For the onions, mix sliced onion with sumac, salt, and lemon juice. Let sit to pickle lightly.
- Preheat grill or grill pan over medium-high heat. Thread marinated chicken onto skewers.
- Grill skewers for 10–12 minutes, turning occasionally, until cooked through and slightly charred.
- Serve hot with salad, sumac onions, toum or hummus, and garnish with parsley.
Notes
- For extra flavor, marinate the chicken overnight.
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Can be served with pita or rice for a complete meal.
