Description

A vibrant and refreshing Mediterranean salad made with juicy tomatoes, creamy mozzarella, and briny olives, all tossed in a zesty herb vinaigrette for a light yet flavorful dish.


Ingredients

  • 4 cups ripe cherry or grape tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini), drained
  • 1 cup mixed olives (green and Kalamata), pitted
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 clove garlic, minced
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon capers, rinsed
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the halved tomatoes, mozzarella balls, and mixed olives.
  2. In a small bowl, whisk together olive oil, red wine vinegar, garlic, basil, parsley, and capers until well blended.
  3. Pour the vinaigrette over the tomato mixture and toss gently to coat.
  4. Season with salt and pepper to taste.
  5. Let the salad sit for 10 minutes before serving to allow the flavors to meld.
