- 1 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 3 large eggs
- 1/2 cup plain Greek yogurt
- 1/4 cup olive oil
- 1/2 cup milk
- 1 cup crumbled feta cheese
- 1/2 cup chopped black olives
- 1/2 cup halved cherry tomatoes
- 1 tsp dried oregano
- 1 tbsp fresh thyme leaves
- 1/2 tsp garlic powder
- Salt and black pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, oregano, garlic powder, salt, and pepper.
- In another bowl, beat the eggs and mix in yogurt, olive oil, and milk until smooth.
- Pour the wet ingredients into the dry mixture and stir until just combined.
- Gently fold in feta, chopped olives, and half of the cherry tomatoes.
- Pour the batter into the prepared loaf pan and top with the remaining tomatoes, more olives, and fresh thyme.
- Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For extra flavor, add sun-dried tomatoes or roasted red peppers.
- This loaf can be served warm or at room temperature.
- Store in an airtight container for up to 3 days.
