- 1 cup all-purpose flour
- 1/2 cup almond flour
- 2 teaspoons matcha green tea powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup coconut sugar (or brown sugar)
- 2 eggs
- 1/4 cup melted coconut oil
- 1/2 cup almond milk (or any milk)
- 1 teaspoon vanilla extract
- 1/4 cup chopped pistachios (plus extra for topping)
- 1/4 cup dried cranberries (plus extra for topping)
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a donut pan well.
- In a large bowl, whisk together the flours, matcha powder, baking powder, baking soda, salt, and coconut sugar.
- In a separate bowl, mix eggs, melted coconut oil, almond milk, and vanilla extract until smooth.
- Pour wet ingredients into the dry and stir until just combined. Fold in the chopped pistachios and cranberries.
- Spoon or pipe the batter into the prepared donut molds, filling each about 3/4 full.
- Sprinkle additional cranberries and pistachios on top of each donut.
- Bake for 14–16 minutes or until the tops spring back lightly when touched.
- Allow to cool in the pan for 5 minutes, then transfer to a wire rack.
- Dust with powdered sugar before serving, if desired.

- Use high-quality matcha for the best flavor and color.
- Don’t overmix the batter to ensure fluffy donuts.
- These are best enjoyed the day they’re made but can be stored in an airtight container for 2–3 days.
