- 3 cups heirloom cherry tomatoes, halved
- 1/4 cup extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 2 garlic cloves, minced
- 1 tablespoon fresh basil, finely chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
Instructions
- In a large bowl, combine the halved cherry tomatoes.
- In a small bowl or jar, whisk together olive oil, balsamic vinegar, red wine vinegar, Dijon mustard, garlic, basil, parsley, oregano, salt, and pepper.
- Pour the dressing over the tomatoes and toss gently to coat.
- Let marinate at room temperature for at least 15–20 minutes before serving to enhance the flavors.
- Serve as a side dish, over grilled bread, or alongside grilled meats.
Notes
- Marinating longer (up to an hour) enhances flavor even more.
- Use a mix of colored cherry tomatoes for visual appeal.
- Can be stored in the fridge for up to 1 day, but best served fresh.
