Description

Bursting with color and garden-fresh flavor, this marinated heirloom cherry tomato salad features a herby vinaigrette that enhances the tomatoes’ natural sweetness. Ideal as a summer side or topping for grilled bread.


Ingredients

  • 3 cups heirloom cherry tomatoes, halved
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves, minced
  • 1 tablespoon fresh basil, finely chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine the halved cherry tomatoes.
  2. In a small bowl or jar, whisk together olive oil, balsamic vinegar, red wine vinegar, Dijon mustard, garlic, basil, parsley, oregano, salt, and pepper.
  3. Pour the dressing over the tomatoes and toss gently to coat.
  4. Let marinate at room temperature for at least 15–20 minutes before serving to enhance the flavors.
  5. Serve as a side dish, over grilled bread, or alongside grilled meats.

Notes

  • Marinating longer (up to an hour) enhances flavor even more.
  • Use a mix of colored cherry tomatoes for visual appeal.
  • Can be stored in the fridge for up to 1 day, but best served fresh.
