Description

These Marinated Grilled Mushroom Skewers feature button mushrooms soaked in a savory and tangy marinade made with olive oil, soy sauce, balsamic vinegar, and aromatic herbs. Grilled to tender perfection with a slightly charred exterior, they make a perfect appetizer, side dish, or light main course for any barbecue or meal.

Ingredients

Scale

For the Marinade:

  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste

For the Skewers:

  • 1 pound button mushrooms, cleaned and stems trimmed
  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together olive oil, soy sauce, balsamic vinegar, and Worcestershire sauce. Add minced garlic, Dijon mustard, and honey or maple syrup, stirring well. Sprinkle in dried thyme, rosemary, smoked paprika, salt, and black pepper. Whisk until smooth and combined.
  2. Marinate the Mushrooms: Place cleaned button mushrooms in a large resealable bag or shallow dish. Pour the marinade over mushrooms, ensuring all are coated evenly. Seal or cover and refrigerate for at least 30 minutes, preferably 2 to 3 hours, to absorb flavors.
  3. Soak the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Metal skewers do not require soaking.
  4. Preheat the Grill: Heat the grill to medium-high. For charcoal, light coals until covered with white ash; for gas, set burners to medium-high and close lid to preheat.
  5. Assemble the Skewers: Remove mushrooms from marinade and thread them onto the skewers, spacing them evenly. Optionally, alternate with other vegetables like bell peppers or cherry tomatoes for variety.
  6. Grill the Mushrooms: Place skewers on the grill and cook for 10 to 12 minutes, turning occasionally to ensure even cooking. Brush with leftover marinade during grilling for extra flavor. Cook until mushrooms are tender and slightly charred.
  7. Serve and Enjoy: Remove skewers from grill and let them cool slightly. Arrange on a platter and garnish with fresh chopped parsley. Serve as an appetizer, side, or main dish.

Notes

  • Marinate mushrooms longer (up to 3 hours) for deeper flavor absorption.
  • Soaking wooden skewers prevents them from burning on the grill.
  • Alternate mushrooms with other vegetables like bell peppers or zucchini for colorful skewers.
  • Brush with leftover marinade cautiously during grilling to avoid flare-ups.
  • Serve immediately for best taste and texture.
