- 1 bag (10 oz) miniature marshmallows (about 6 cups)
- 3 tablespoons unsalted butter
- 3 cups crispy rice cereal (such as Rice Krispies)
- 3 cups Lucky Charms cereal

- 1/4 teaspoon fine sea salt for sprinkling
- 1/2 teaspoon vanilla extract
Instructions
- Step 1 Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides to create handles. Lightly spray the parchment with non-stick cooking spray. In a large heatproof bowl, combine the crispy rice cereal and Lucky Charms. Gently toss to distribute the marshmallow pieces evenly. Set aside.
- Step 2 In a large Dutch oven or heavy-bottomed pot, melt the butter over low heat. Add the miniature marshmallows all at once. Stir constantly with a silicone spatula or wooden spoon, keeping the heat low, until the marshmallows are completely melted and the mixture is smooth. This takes about 5-7 minutes. If using vanilla extract, stir it in when the marshmallows are about 75% melted.
- Step 3 Remove the pot from heat immediately. Pour the combined cereals into the pot all at once. Fold gently using a lifting and turning motion until every piece of cereal is coated and no dry cereal remains. Be careful not to crush the cereal or marshmallow charms.
- Step 4 Transfer the mixture to the prepared pan. Lightly spray your hands or a silicone spatula with non-stick cooking spray, then press the mixture firmly and evenly into the pan. Work the mixture into the corners and create an even surface. If using sea salt, sprinkle it lightly over the warm treats now.
- Step 5 Let the treats cool completely at room temperature for 1-2 hours until firm. Use the parchment handles to lift the block onto a cutting board. Cut into 24 squares (6 rows by 4 rows) using a large sharp knife, wiping the knife clean with a damp paper towel between cuts for best results.
Notes
- If using vanilla extract, add it when marshmallows are about 75% melted for best flavor.
- Lightly spray hands or spatula with non-stick spray to prevent sticking when pressing mixture into pan.
- Wipe knife clean between cuts for neat squares.
- Sprinkle sea salt over warm treats for a subtle salty contrast (optional).
