Description

Juicy chicken thighs and drumsticks roasted in a zesty lemon-garlic marinade, finished with caramelized lemon slices and fresh herbs — a vibrant, flavorful main perfect for weeknight dinners or meal prep.


Ingredients

  • 6 bone-in, skin-on chicken thighs or drumsticks
  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 lemon, thinly sliced
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, Dijon mustard, paprika, salt, and pepper.
  3. Place chicken in a large bowl or zip-top bag and pour marinade over. Toss to coat and let sit for at least 30 minutes (or overnight for best flavor).
  4. Arrange chicken in a baking dish or ovenproof skillet. Top each piece with a lemon slice.
  5. Roast for 35–40 minutes, or until chicken is golden brown and internal temperature reaches 165°F (74°C).
  6. Spoon pan juices over the chicken before serving and garnish with fresh parsley.
