Description

This Instant Pot Ginger Garlic Chicken recipe combines tender chicken cooked under high pressure with a flavorful ginger-garlic soy sauce glaze. Paired with quick and easy homemade fried rice loaded with peas, carrots, and egg, this meal is perfect for a wholesome weeknight dinner, ready in just 35 minutes.

Chicken and Sauce

  • 4 frozen chicken tenders (or 2 chicken breasts cut in half)
  • 1/3 cup water
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon prepared chopped garlic (or two cloves garlic, chopped)
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Fried Rice

  • 3 cups cooked rice (made from 1 1/2 cups uncooked rice)
  • 2 tablespoons olive oil
  • 1/2 small onion, chopped
  • 1 teaspoon minced garlic
  • 1/2 bag frozen peas and carrots (about 1 cup)
  • 3 tablespoons soy sauce
  • 2 tablespoons butter
  • 2 eggs, beaten with a fork

Instructions

  1. Prepare the Rice. Cook 1 1/2 cups of rice according to package instructions to yield approximately 3 cups cooked rice. Set aside.
  2. Prepare Instant Pot. Spray the bottom of the Instant Pot inner pot with cooking spray to prevent sticking.
  3. Mix Sauce Base. In the bottom of the Instant Pot, combine water, soy sauce, brown sugar, ground ginger, chopped garlic, and sesame oil. Stir well to blend the flavors.
  4. Add Chicken. Layer frozen chicken tenders on top of the sauce mixture in the Instant Pot. Try to coat the chicken with the sauce as best as possible, although the chicken is frozen and coating may be uneven.
  5. Pressure Cook. Secure the Instant Pot lid and set the valve to sealing. Cook on high pressure for 8 minutes.
  6. Release Pressure. When cooking time ends, perform a quick release by turning the valve to venting to release steam immediately.
  7. Remove Chicken. Carefully take the cooked chicken out and place it on a clean plate to keep warm.
  8. Thicken Sauce. Set the Instant Pot to sauté mode. In a small bowl, whisk cornstarch and cold water to make a slurry. Add this mixture to the sauce in the pot and stir continuously until the sauce thickens and becomes clear.
  9. Return Chicken to Sauce. Add the chicken back into the thickened sauce in the Instant Pot. Stir to coat the chicken evenly with the sauce. Turn off the Instant Pot.
  10. Prepare Fried Rice. Heat a large skillet or frying pan over medium heat and add olive oil.
  11. Sauté Onion and Garlic. Add the chopped onion and cook for about 2 minutes until translucent. Then add minced garlic and cook for another 1 minute, stirring frequently to prevent burning.
  12. Add Rice. Add the cooked rice to the skillet and stir well. Cook for approximately 2 minutes to warm through.
  13. Season Rice. Pour soy sauce over the rice mixture and stir to combine.
  14. Add Vegetables. Add the frozen peas and carrots to the skillet, stirring them into the rice. Cook for about 3 minutes until heated through.
  15. Add Butter. Stir in butter until melted and incorporated.
  16. Cook Egg. Push the rice mixture to the sides of the pan creating a circle in the center. Pour the beaten eggs into the center and scramble until cooked through. Once cooked, mix the egg into the rice evenly.
  17. Serve. Plate the ginger garlic chicken alongside the freshly made fried rice for a complete meal.

Notes

  • Using frozen chicken makes it easier but increases cooking time; ensure chicken is fully cooked before serving.
  • Adjust soy sauce quantities to taste if a less salty flavor is preferred.
