Chicken and Glaze

  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup honey
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced

Rice Layer

  • 1 cup cooked white or brown rice
  • 1/4 cup cilantro, chopped
  • 1 tablespoon lime juice

Avocado Layer

  • 2 ripe avocados, sliced
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken Season the chicken breasts with salt and pepper on both sides. In a small bowl, whisk together honey, lime juice, lime zest, and minced garlic to create a flavorful glaze. Heat a large skillet over medium-high heat and add a drizzle of oil. Cook the chicken breasts for 6-7 minutes per side until golden brown and fully cooked (internal temperature should reach 165°F). During the last 2 minutes, brush the honey lime glaze over the chicken to allow it to caramelize. Remove from heat and let the chicken rest for 5 minutes before slicing.
  2. Prepare the Rice In a medium bowl, combine the cooked rice with chopped cilantro and lime juice. Season with salt to taste and mix well. Set aside to cool slightly so it firms up for stacking.
  3. Prepare the Avocado Slice the ripe avocados and gently toss them with lime juice, salt, and pepper. This not only adds flavor but also prevents the avocado from browning, keeping it fresh and vibrant.
  4. Assemble the Stack Place a round mold or large cookie cutter on the serving plate. Press the seasoned rice mixture firmly into the bottom of the mold to form the base layer. Next, layer the sliced avocado over the rice, slightly overlapping each slice for an attractive presentation. Finally, top with evenly sliced honey lime chicken. Carefully remove the mold to reveal the layered stack. Repeat for additional servings. Drizzle any remaining honey lime glaze around the plate to enhance flavor and presentation.
