  • 1 medium onion (diced)
  • 3 medium potatoes (peeled and diced into small cubes)
  • 1 red bell pepper (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme or oregano
  • 1/4 teaspoon chili powder (optional)
  • 1/4 cup beef broth or water
  • 2 tablespoons ketchup (optional, for slight sweetness)
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Heat olive oil or butter: Heat olive oil or butter in a large skillet over medium heat.
  2. Cook potatoes: Add the diced potatoes and cook for about 8–10 minutes, stirring occasionally, until they begin to turn golden and slightly tender.
  3. Add vegetables: Add the onion and bell pepper. Cook for another 3–4 minutes until softened.
  4. Cook ground beef: Push the vegetables to one side of the skillet. Add the ground beef to the empty side and cook until browned, breaking it up with a spoon.
  5. Season mixture: Stir everything together. Add garlic, paprika, salt, pepper, thyme, and chili powder. Mix well.
  6. Simmer: Pour in the beef broth and add ketchup if using. Stir and let simmer uncovered for about 8–10 minutes, until potatoes are fully tender and the mixture thickens slightly.
  7. Adjust seasoning and serve: Taste and adjust seasoning if needed. Sprinkle with parsley before serving.
