Cookie Ingredients
- 1 cup natural peanut butter
- 1/2 cup honey or maple syrup
- 1 egg
- 1 tsp baking soda
- 1/2 tsp vanilla extract
- A pinch of salt
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
- Mix ingredients: In a mixing bowl, combine the natural peanut butter, honey or maple syrup, egg, baking soda, vanilla extract, and a pinch of salt. Mix thoroughly until the batter is smooth and well blended.
- Scoop the dough: Use a tablespoon to scoop portions of the dough onto the lined baking sheet. Space each portion about 2 inches apart to allow for spreading during baking.
- Flatten the cookies: Gently press down each dough ball with a fork, creating a crisscross pattern on top. This helps the cookies bake evenly and adds a classic peanut butter cookie texture.
- Bake the cookies: Bake in the preheated oven for 10-12 minutes or until the edges turn a golden brown color.
- Cool the cookies: Remove the cookies from the oven and let them cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
Notes
- For a vegan version, substitute the egg with a flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water).
- You can use either honey or maple syrup depending on your preference or dietary restrictions.
- Make sure to use natural peanut butter without added sugar or oils for best health benefits.
- Store cooled cookies in an airtight container for up to 5 days.
