Instructions

  1. Prepare the Date Paste: Process the pitted dates in a food processor until they reach a sticky and very thick jam-like consistency, which will form the base of the turtles.
  2. Shape Date Balls: Using the palms of your hands (slightly wet to prevent sticking), roll the date paste into 15 marble-sized balls. Place these balls on a lightly greased cookie sheet to prevent sticking.
  3. Add Pecans and Chill: Press 2-3 pecan halves firmly into each date ball. Then place the cookie sheet in the freezer for 10 minutes to allow the date and pecan combination to set.
  4. Melt the Chocolate: Heat a small saucepan over very low heat and add the dark chocolate. Stir continuously until the chocolate is fully melted and smooth, then remove from the heat to prevent burning.
  5. Coat with Chocolate: Using a spoon, pour a small amount of the melted chocolate over each date and pecan mound. Repeat the process until each turtle is completely covered with a smooth chocolate shell that will harden quickly.
  6. Freeze to Set: Return the coated turtles to the freezer for at least 10 more minutes to ensure the chocolate shell solidifies properly.
