Ingredients

Units Scale

Marinade Ingredients

  • 45 slices Fresh ginger, peeled and thinly sliced
  • 2 cloves Garlic, minced
  • 2 tablespoons Soy sauce
  • 1 tablespoon Dark soy sauce
  • 1 can (400 mL) Coconut milk
  • 1 tablespoon Brown sugar
  • 2 tablespoons Fresh lime juice
  • Salt and pepper, to taste

Main Ingredient

  • 1 kg Chicken (dark meat preferred, thighs or drumsticks, boneless and cut into chunks)

Additional

  • Skewers (if using wooden, soak in water for at least 30 minutes)

Instructions

  1. Prepare the Marinade: In a large mixing bowl, combine the fresh ginger slices, minced garlic, soy sauce, dark soy sauce, coconut milk, brown sugar, fresh lime juice, salt, and pepper. Whisk everything together until thoroughly blended to create a flavorful marinade base.
  2. Marinate the Chicken: Add the boneless chicken chunks to the bowl with the marinade, turning them well to ensure each piece is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor infusion.
  3. Assemble the Skewers: Thread the marinated chicken pieces onto your pre-soaked skewers, leaving a small space between each piece. This spacing helps the heat circulate evenly for uniform cooking.
  4. Preheat the Grill: Heat your outdoor grill or stovetop grill pan to medium-high. Lightly oil the grill grates to prevent the chicken from sticking during cooking.
  5. Grill the Skewers: Place the chicken skewers on the hot grill. Cook for about 4-5 minutes on each side, turning once, until the chicken develops a nice char and is cooked through thoroughly.
  6. Serve and Enjoy: Remove the skewers from the grill, optionally squeeze additional fresh lime juice over them for a bright finish, and serve immediately while hot and flavorful.

Notes

  • Soaking wooden skewers beforehand prevents burning during grilling.
  • You can substitute dark meat chicken with chicken breast if preferred, but dark meat remains juicier.
  • Marinating for longer than 4 hours is not recommended as the coconut milk can start to break down the chicken texture.
  • Grilling times may vary depending on grill temperature; always ensure chicken reaches an internal temperature of 165°F (75°C).
  • Serve these skewers with steamed jasmine rice or a fresh salad for a complete meal.
