- 2 salmon fillets
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 1 tablespoon fresh parsley, chopped
- 2 cups baby potatoes, halved
- 2 cups broccoli florets
- Garlic Herb Butter Sauce:
- 3 tablespoons unsalted butter
- 2 garlic cloves, minced
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon chopped parsley
- Salt and pepper to taste
Instructions
- Boil baby potatoes in salted water until fork-tender, about 12–15 minutes. Drain and set aside.
- Steam broccoli for 5–6 minutes until bright green and just tender.
- Pat salmon dry, brush with olive oil, and season with salt and pepper. Grill or sear in a hot skillet over medium-high heat for 4–5 minutes per side until cooked through.
- In a small saucepan, melt butter over medium heat. Add garlic and sauté for 1 minute. Stir in lemon juice, Dijon mustard, parsley, salt, and pepper.
- Spoon the garlic herb butter sauce over grilled salmon. Serve alongside the potatoes and broccoli.
- Garnish with additional parsley and serve hot.
