Scale
- 8 oz halloumi cheese, cut into 1-inch cubes
- 1 red bell pepper, chopped into chunks
- 1 yellow or orange bell pepper, chopped into chunks
- 1 small red onion, sliced into large pieces
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- Fresh mint or basil leaves, for garnish
- Lemon wedges, for serving
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- In a large bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
- Add halloumi cubes, bell peppers, and onions. Toss gently to coat. Let marinate for 10–15 minutes.
- Preheat grill or grill pan over medium-high heat.
- Thread halloumi, peppers, and onions alternately onto the skewers.
- Grill skewers for 8–10 minutes, turning occasionally, until vegetables are tender and halloumi is golden with grill marks.
- Transfer to a platter, garnish with fresh mint or basil, and serve with lemon wedges.
Notes
- Halloumi holds its shape well on the grill, making it perfect for skewers.
- Substitute vegetables based on availability, such as zucchini or cherry tomatoes.
- Serve with a side of tzatziki or warm pita for a fuller meal.
- Use metal skewers for reusable, eco-friendly grilling.
