- Salt & pepper to taste
- 4 wooden skewers, soaked in water
- 2 hoagie rolls or sub rolls, lightly toasted
- 1/4 cup mayonnaise or Greek yogurt
- 1 clove garlic, grated
- Fresh parsley or cilantro for garnish
Instructions
- In a bowl, mix olive oil, minced garlic, lemon zest, lemon juice, oregano, paprika, salt, and pepper.
- Add chicken chunks and toss to coat. Marinate for at least 30 minutes.
- Thread marinated chicken onto soaked wooden skewers.
- Grill on medium-high heat for 10-12 minutes, turning occasionally, until cooked through and slightly charred.
- In a small bowl, mix mayonnaise or Greek yogurt with grated garlic to make the garlic sauce.
- Toast the hoagie rolls lightly.
- Place one grilled chicken skewer into each roll.
- Drizzle with garlic sauce and garnish with fresh parsley or cilantro.
- Remove skewers before eating and serve immediately.
