Description

Juicy, herb-marinated grilled chicken skewers nestled in toasted hoagie rolls and topped with a creamy garlic sauce. A Mediterranean-inspired sandwich perfect for casual dinners or summer cookouts.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into chunks
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • 4 wooden skewers, soaked in water
  • 2 hoagie rolls or sub rolls, lightly toasted
  • 1/4 cup mayonnaise or Greek yogurt
  • 1 clove garlic, grated
  • Fresh parsley or cilantro for garnish

Instructions

  1. In a bowl, mix olive oil, minced garlic, lemon zest, lemon juice, oregano, paprika, salt, and pepper.
  2. Add chicken chunks and toss to coat. Marinate for at least 30 minutes.
  3. Thread marinated chicken onto soaked wooden skewers.
  4. Grill on medium-high heat for 10-12 minutes, turning occasionally, until cooked through and slightly charred.
  5. In a small bowl, mix mayonnaise or Greek yogurt with grated garlic to make the garlic sauce.
  6. Toast the hoagie rolls lightly.
  7. Place one grilled chicken skewer into each roll.
  8. Drizzle with garlic sauce and garnish with fresh parsley or cilantro.
  9. Remove skewers before eating and serve immediately.

  • Marinate the chicken up to 8 hours ahead for deeper flavor.
