Description

Crispy on the outside and fluffy on the inside, these golden fish croquettes are made with flaky white fish, mashed potatoes, herbs, and spices—perfect for appetizers, picnics, or light meals.


Ingredients

  • 2 cups cooked white fish (cod, haddock, or pollock), flaked
  • 2 large potatoes, boiled and mashed
  • 1 small onion, finely chopped
  • 2 tablespoons chopped parsley
  • 1 egg
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon paprika
  • Salt to taste
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil, for deep frying

Instructions

  1. In a large bowl, combine mashed potatoes, flaked fish, onion, parsley, egg, pepper, paprika, and salt. Mix until well blended.
  2. Form the mixture into cylinder-shaped croquettes. Place on a tray and chill for 30 minutes.
  3. Roll each croquette in flour, dip into beaten eggs, then coat with breadcrumbs.
  4. Heat oil in a deep skillet or fryer to 350°F (175°C).
  5. Fry croquettes in batches for 3–4 minutes per side, or until golden brown and crisp.
  6. Remove and drain on paper towels.
  7. Serve hot with lemon wedges and a fresh salad.

Notes

  • Chilling helps the croquettes hold their shape during frying.
  • Use leftover fish or mashed potatoes to save prep time.
  • Serve with tartar sauce or aioli for extra flavor.
