Sweet Potatoes
- 2 lb sweet potatoes (peeled and cut into 1-inch cubes)
Seasoning

- 1/2 tsp smoked paprika (optional, for a hint of smoky warmth)

Instructions
- Prepare the Oven and Baking Sheet: Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
- Cube the Sweet Potatoes: Peel the sweet potatoes and cut them into 1-inch cubes. Uniform size helps achieve even roasting.
- Toss with Seasonings: In a large bowl, mix together olive oil, minced garlic, kosher salt, black pepper, and smoked paprika (if using). Add the sweet potato cubes and toss until they are evenly coated with the mixture.
- Arrange for Roasting: Spread the seasoned sweet potatoes out on the prepared baking sheet in a single layer. Make sure there is some space between the cubes to allow for proper browning and crisping.
- Roast Sweet Potatoes: Roast in the preheated oven for 20 minutes. Then, flip the cubes over using a spatula to ensure even cooking and continue roasting for an additional 8–12 minutes, or until the sweet potatoes are tender inside with crisp, caramelized edges.
- Add Parmesan Cheese: Remove the baking sheet from the oven and immediately sprinkle the grated Parmesan cheese over the hot sweet potatoes. Gently toss to help the cheese melt on contact. Optionally, return the pan to the oven for 1–2 more minutes to allow the cheese to adhere better.
- Garnish and Serve: Sprinkle chopped fresh parsley over the roasted potatoes for a burst of color and fresh flavor. Serve hot and enjoy.
