- 2 lb side of salmon (boneless, skinless)
- 4 tablespoons butter
- 8 cloves garlic, peeled and roughly chopped
- 1/4 cup chicken broth (or vegetable broth)
- 2–3 tablespoons fresh lemon juice (a little extra to replace the wine)
- Salt and pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup thinly sliced green onions
- Lemon wedges (for serving)
Instructions
- Preheat Oven: 375°F (190°C) OR heat grill to medium
- Prepare foil Line a large baking dish with a big sheet of aluminum foil
- Make garlic butter sauce Melt butter in a small saucepan over medium heat Add garlic and cook for 1–2 minutes until fragrant (not browned) Remove from heat Stir in chicken broth + lemon juice
- Assemble Brush a little sauce on the foil Place salmon on top Pour remaining sauce over salmon and spread evenly Season with salt and pepper
- Seal Fold foil over the salmon to fully seal it (Add another sheet if needed)
- To Bake Bake for 14–15 minutes until almost cooked Open foil carefully (watch steam!) Switch oven to broil Broil for 3–4 minutes until top is lightly golden
- To Grill Grill sealed foil packet for 12–14 minutes Open foil carefully Cook uncovered for 3–4 more minutes until slightly golden
- Finish Remove from oven/grill Sprinkle parsley + green onions Serve with lemon wedges
