- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tbsp chopped fresh rosemary (or 1 tsp dried)
- 1 tbsp chopped fresh thyme (or 1 tsp dried)
- 1 tsp salt
- 1/2 tsp black pepper
- Optional: extra lemon wedges and herbs for garnish
Instructions
- In a bowl, whisk together olive oil, garlic, lemon juice, rosemary, thyme, salt, and pepper.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).
- Preheat grill or grill pan over medium-high heat. Thread marinated chicken pieces onto skewers.
- Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is golden and cooked through (internal temperature should reach 165°F / 75°C).
- Transfer to a serving platter and garnish with fresh herbs or lemon wedges if desired. Serve hot.
Notes
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Use a meat thermometer to ensure perfectly cooked chicken.
- Great served with rice, salad, or flatbread.
