Description

Flavorful grilled chicken skewers marinated in a bright garlic and herb blend—tender, juicy, and perfect for grilling season or a healthy weeknight meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tbsp chopped fresh rosemary (or 1 tsp dried)
  • 1 tbsp chopped fresh thyme (or 1 tsp dried)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: extra lemon wedges and herbs for garnish

Instructions

  1. In a bowl, whisk together olive oil, garlic, lemon juice, rosemary, thyme, salt, and pepper.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).
  3. Preheat grill or grill pan over medium-high heat. Thread marinated chicken pieces onto skewers.
  4. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is golden and cooked through (internal temperature should reach 165°F / 75°C).
  5. Transfer to a serving platter and garnish with fresh herbs or lemon wedges if desired. Serve hot.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Use a meat thermometer to ensure perfectly cooked chicken.
  • Great served with rice, salad, or flatbread.
