Steak and Potatoes
- 1 lb sirloin steak, cut into bite-sized pieces
- 1 lb baby potatoes, halved or quartered
- Salt and pepper, to taste
- 1 tsp dried thyme
- 1 tsp dried rosemary

- 3 tbsp butter, divided
- 1 tbsp olive oil
- 4 cloves garlic, minced

Instructions
- Prepare potatoes: In a large skillet over medium heat, add 1 tbsp butter and 1 tbsp olive oil. Add the halved or quartered baby potatoes, then season with salt, pepper, dried rosemary, and dried thyme. Cook the potatoes for 10 to 12 minutes, stirring occasionally, until they are fork-tender and golden brown. Once cooked, remove the potatoes from the skillet and set them aside.
- Sear steak: Using the same skillet, add 1 tbsp butter. Place the sirloin steak bites in a single layer without overcrowding the pan. Sear the steak pieces for 2 to 3 minutes on each side, or until they are browned and cooked to your liking. Once done, remove the steak bites from the skillet and set aside.
- Make garlic butter: Reduce the heat to low and add the remaining 1 tbsp butter along with the minced garlic to the skillet. Sauté for about 1 minute, stirring constantly, until the garlic releases its aroma and becomes fragrant, but not burnt.
- Combine & serve: Return the cooked steak bites and potatoes to the skillet. Toss everything together thoroughly, allowing the garlic butter to coat the ingredients evenly. Garnish with freshly chopped parsley and serve immediately while warm.
