  • Salt & pepper, to taste
  • Flour, for dredging

Sauce

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 cup chicken broth (or vegetable broth)
  • 1 tablespoon lemon juice
  • 34 cloves garlic, minced

Optional Garnish

  • Fresh parsley
  • Red pepper flakes
  • Parmesan cheese

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Begin preparing the sauce once the water is boiling.
  2. Prepare the salmon: Season the salmon with salt and pepper, then dredge in flour to lightly coat it.
  3. Cook the salmon: Heat the olive oil and butter in a skillet over medium-high heat. Once hot, add the salmon and cook for 2 minutes on each side. Remove the salmon from the pan and set aside. If desired, peel off the skin at this stage.
  4. Make the sauce: Add the chicken broth, minced garlic, and lemon juice to the skillet. Reduce heat to medium and simmer for about one minute to infuse the flavors and slightly reduce the liquid.
  5. Finish the salmon in sauce: Return the salmon to the skillet, break it into bite-sized pieces with a spoon, and cook for a few more minutes until the salmon is thoroughly cooked and the sauce has thickened somewhat.
