Description

Golden baby potatoes seared to perfection and coated in a rich garlic butter sauce, finished with fresh parsley for a simple yet irresistible side dish.


Ingredients

  • 1 1/2 lbs baby potatoes, halved
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon juice (optional, for brightness)

Instructions

  1. Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat.
  2. Place potatoes cut-side down in the skillet. Cook without moving for 6-8 minutes until golden and crisp.
  3. Flip the potatoes and cook for another 5-6 minutes until tender.
  4. Add remaining butter and garlic. Stir to coat the potatoes and cook for 1-2 minutes until garlic is fragrant.
  5. Season with salt, pepper, and lemon juice if using. Sprinkle with parsley and serve hot.
