- 2 cups Greek yogurt (plain or vanilla)
- 2 tbsp maple syrup or honey
- 1/2 tsp vanilla extract
- 1 1/2 cups granola
- 1 tbsp coconut oil (melted)
- 1/2 cup mixed berries (blueberries, raspberries, strawberries)
- Parchment paper
Instructions
- Line an 8×8-inch baking dish with parchment paper.
- In a small bowl, mix granola with melted coconut oil and press it firmly into the bottom of the dish to form an even base.
- In another bowl, combine Greek yogurt, maple syrup, and vanilla extract. Spread the yogurt mixture evenly over the granola base.
- Top with an even layer of mixed berries, gently pressing them into the yogurt.
- Freeze for at least 3 hours or until completely set.
- Once frozen, lift the parchment and cut into bars or squares. Store in the freezer until ready to eat.

- Use silicone or parchment for easy removal from the pan.
