Description

A refreshing, wholesome treat made with creamy Greek yogurt layered over a crisp oat and honey granola base, topped with juicy fresh berries and frozen to perfection—these bars are a cool, nutritious snack or breakfast-on-the-go.


Ingredients

  • 2 cups Greek yogurt (plain or vanilla)
  • 2 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • 1 1/2 cups granola
  • 1 tbsp coconut oil (melted)
  • 1/2 cup mixed berries (blueberries, raspberries, strawberries)
  • Parchment paper

Instructions

  1. Line an 8×8-inch baking dish with parchment paper.
  2. In a small bowl, mix granola with melted coconut oil and press it firmly into the bottom of the dish to form an even base.
  3. In another bowl, combine Greek yogurt, maple syrup, and vanilla extract. Spread the yogurt mixture evenly over the granola base.
  4. Top with an even layer of mixed berries, gently pressing them into the yogurt.
  5. Freeze for at least 3 hours or until completely set.
  6. Once frozen, lift the parchment and cut into bars or squares. Store in the freezer until ready to eat.

Notes

  • Use silicone or parchment for easy removal from the pan.
  • Choose granola without added sugar for a healthier option.
  • Customize with nuts, seeds, or dried fruits for added texture.
