- 6 ripe fresh figs
- 1/3 cup goat cheese, softened
- 2 tablespoons cream cheese (optional, for a creamier whip)
- 1 tablespoon honey (plus more for drizzling)
- 1/4 teaspoon vanilla extract (optional)
- 2 tablespoons chopped pistachios
- Fresh thyme sprigs for garnish
Instructions
- In a small bowl, whip together goat cheese, cream cheese (if using), honey, and vanilla extract until smooth and fluffy. Set aside.
- Gently wash figs and pat dry. Make an “X” cut at the top of each fig, slicing about halfway down, without cutting all the way through.
- Gently open the figs slightly and place them on a serving plate.
- Spoon or pipe the whipped goat cheese mixture into the center of each fig.
- Sprinkle chopped pistachios over the top and drizzle generously with extra honey.
- Garnish with fresh thyme sprigs.
- Serve immediately as an elegant appetizer, cheese board addition, or light dessert.
